I halved this recipe, except for the egg.
Assemble the ingredients: White whole wheat flour, skim milk, egg, vegetable oil, vanilla extract, baking powder, salt, brown sugar, strawberries
In a large bowl mix the flour, sugar, baking powder and salt.
Add the milk, egg, vegetable oil, and vanilla extract. Fold in strawberries.
Heat a saute pan or griddle to medium high heat. In batches, add pancake batter to pan and let cook for 3-5 minutes or until batter bubbles. Since I used a whole egg, they were kind of runny.
Flip over for another 2-3 minutes.
Sprinkle with powdered sugar.
Vanilla Strawberry Pancakes
1/2 c white whole wheat flour
1/2 c skim milk
1 egg
1 T vegetable oil
1 T organic vanilla extract (I used Spice Islands vanilla extract)
1 t baking powder
1/2 t table salt
1 T brown sugar
Sliced strawberries
1. In a large bowl mix the flour, sugar, baking powder and salt.
2. Add the milk, egg, vegetable oil, and vanilla extract.
3. Fold in strawberries.
4. Heat a saute pan or griddle to medium high heat.
5. In batches, add pancake batter to pan and let cook for 3-5 minutes or until batter bubbles.
6. Flip over for another 2-3 minutes.
7. Sprinkle with powdered sugar and fresh strawberries.

Review:
The only thing I would change about this is possible smaller pieces of strawberry, more strawberries, or maybe mashing the strawberries.
