Assemble the ingredients: Greek yogurt, honey, egg, baking soda, flour, fruit. I halved the original recipe.
Mix together yogurt, honey and egg. I like to use my easy pour measuring cup for pancakes.
Once combined...
Slowly mix in flour and baking soda. I added the fruit in this step because I wanted to mash it a little bit first.
Preheat a large pan or a griddle on medium heat. Scoop about 1/4 cup of batter onto cooking surface. Cook for 2 minutes or until golden brown. Flip and cook for another 1-2 minutes until that side is also golden brown.
Greek Yogurt Pancakes (slightly modified)
3 oz of Greek yogurt (If you buy it in a 32 oz container like I do, it's about 1/3-1/2 c)
1/2 T of honey
1 egg (you can "half" this, but a whole one works fine)
1/2 t of baking soda
1/4 c flour
Fruit (I used 1/2 banana and 3 medium strawberries)

3. Preheat a large pan or a griddle on medium heat. Scoop about 1/4 a cup of batter onto cooking surface. If you use a whole egg, the batter won't be as thick.
4. Cook for 2 minutes or until golden brown. Flip and cook for another 1-2 minutes until that side is also golden brown.

Review:
Other than mashing the banana and strawberries some more, this was great. I've made this with whole wheat also and it was good (I sprinkled a little cinnamon to try to mask the stronger flavor of the whole wheat). I've also used plain and vanilla Greek yogurt and both were fine. You can also use a flavored yogurt to compliment the fruit (like the original recipe did).
