Finally had time to put this together (not that it takes a long time, but it takes a long time to cook and my "at-home" times didn't match up well enough to make this).
I had some uncooked bacon leftover. And enough to, get this... DOUBLE the recipe. I also used tenderloins instead of full breasts, so I only used 1 slice of bacon per breast (and had one slice of bacon leftover).
Assemble the ingredients: Boneless skinless chicken breasts (or tenderloins), bacon, BBQ sauce, apples, lemon juice
Wrap each chicken breast in 2 slices of bacon and place in a slow cooker. Like I said, since they were tenderloins, I only used 1 slice per piece of chicken. And then I just threw the extra slice on top.
Mix the BBQ sauce, apples and lemon juice. I didn't peel the apples. I never peel apples. 90% lazy, 10% that's where the fiber is.
Pour it over the chicken.
Cook on low.
This is less than three and a half hours later. The chicken was starting to fall apart.
I left it in for another almost 30 minutes while I made my side dish. So mine was done in about 4 hours.
Slow Cooker Bacon Wrapped Apple BBQ Chicken (Doubled, sort of)
4 small boneless skinless chicken breasts (or 8 tenderloins)
8 slices bacon (I used center cut)
1 c BBQ sauce (I used Jack Daniels)
2 large apples, peeled and cut into small pieces (I didn't peel them and I only had 2 apples, so I didn't double this, and I think it was fine)
1/4 c lemon juice
1. Wrap each chicken breast in 2 slices of bacon and place in a slow cooker. If using tenderloins, use 1 slice of bacon per tenderloin.
2. Mix the BBQ sauce, apples and lemon juice.
3. Pour the mixture over the chicken.
4. Cook on low for up to 8 hours. I would start checking after 3, depending on the size of your chicken breasts.

Review:
This was really good. And really easy. I like that it doesn't require a lot of ingredients and it's things that I usually have on hand at any given time.
There were a LOT of apples, even though I doubled the rest of the recipe except for the apples. You might be able to get away with 1 apple if you do the regular recipe.
