Saturday Morning Breakfast: French Breakfast Muffins

Assembled the ingredients: all-purpose flour, white sugar, baking powder, ground nutmeg, salt, egg, milk, butter, cinnamon


In a medium mixing bowl, stir together flour, 1/2 cup sugar, baking powder, nutmeg and salt.


Make a well in the center of the mixture. Stir together egg, milk and 1/3 cup melted butter. Add egg mixture to flour mixture; stir until just moistened (batter may be lumpy).


Spoon batter into prepared muffin cups.


Bake in preheated oven for 20 to 25 minutes. Meanwhile, combine 1/4 cup sugar, cinnamon. When muffins are finished baking, dip tops of muffins in the melted butter, and then in the cinnamon sugar mixture. Serve warm.

1 1/2 c all-purpose flour (could probably substitute white whole wheat flour)
1/2 c white sugar
1 1/2 t baking powder
1/4 t ground nutmeg
1/8 t salt
1 egg, lightly beaten
1/2 c milk
1/3 c butter, melted

Topping:
1/4 c white sugar
1/2 t ground cinnamon
1/3 c butter, melted

1. Preheat oven to 350.
2. Grease muffin cups or line with paper muffin liners.

Review:

I don't know why I ended up with smaller muffins? Hmmm... oh well. These were ok. I liked the topping better than the muffin.
