Another single serving dessert. I can't believe I didn't know it was possible to make a cake in a mug in the microwave before. I would have been doing this for years!
Assemble the ingredients: all purpose flour, white granulated sugar, baking powder, egg, peanut butter, milk, vegetable oil (not pictured - the 2nd time I made this, I used applesauce)
Combine all ingredients in a large coffee mug.
Whisk well with a small whisk until smooth.
Microwave on high for 1 1/2 minutes and then take it out to check to see if it is done. If not, continue to microwave in thirty second intervals.
Peanut Butter Mug Cake (slightly modified)
4 T all purpose flour (I haven't tried whole wheat, but I'm sure it would work)
4 T white granulated sugar
1/4 t baking powder
1 egg
3 T peanut butter (I used Natural both times)
3 T milk (I used fat free dairy the 1st time and almond coconut the 2nd, both worked fine)
3 T vegetable oil or applesauce

3. Microwave on high for 1 1/2 minutes and then take it out to check to see if it is done. If not, continue to microwave in 30 second intervals.

Review:
This was really good! It was a lot of cake though. I almost couldn't finish it. (Almost) I may cut it in half next time. I didn't the 2nd time because I was really hungry.
Using applesauce (and maybe the almond coconut milk) made it take longer to solidify. The 1st time, it was done in a minute and a half, but the 2nd time took 2 minutes. Both versions were very moist!
Both time, I meant to throw in some chocolate chips, but forgot. Oh well, I'm sure that is really good too!
