I love oatmeal. And apple pie. And I also love that this recipe was just for 1 serving.
You'll notice I didn't use pecans or walnuts as called for in the original recipe. I don't like them.
Stir, stir, stir.
Ready to eat!
Apple Pie Oatmeal
1/2 c apple, cut into 1/2 inch cubes, skin left on
1 t unsalted butter
2 T brown sugar
1 t cinnamon
1/8 t ground nutmeg
1 c water (a little less if you like denser oatmeal)
1/2 c quick cooking oats
Additional brown sugar and cream for topping (optional)
1. In a saucepan, melt the butter over medium-high heat.
2. Add the apple cubes and cook for about 2 minutes.
3. Add the brown sugar, cinnamon and nutmeg to the apples and butter. Stir together and cook for another 3 minutes until the apples are softened and the sugar and spices have created a nice coating on the apples.
4. Add the water and bring to a simmer.
5. Add the oats and cook for another 2 or 3 minutes, stirring constantly. The oats should soak up the water.
6. Transfer the oatmeal to a serving bowl and top with additional brown sugar and/or a drizzle of heavy cream or milk. (I just ate it as is)
