"Dessert" Friday: Healthy Peanut Butter Oatmeal Cookies

Healthy cookies! Why not?


This was during a big spurt in, "making a whole bunch of Pinterest recipes" so I only managed one.

Healthy Peanut Butter Oatmeal Cookies

2 ripe bananas, mashed
1/3 c reduced fat peanut butter (I used Jif Natural - which is not reduced fat)
2/3 c unsweetened applesauce
1 t vanilla
1/2 t salt
1/2 t cinnamon
dash of ground cloves
dash of ground nutmeg
1 1/2 c quick or old fashioned oats (I used old fashioned)
1/4 c nuts (I did skip these because I didn't have any)
1/4 c semi sweet chocolate chips
1/4 c unsweetened shredded coconut

1. Preheat oven to 350 degrees.
2. Line a baking sheet with parchment paper. (I didn't because my baking sheets are really good non-stick)
3. Mix together the bananas, peanut butter, applesauce, vanilla, and spices.
4. Add oats, nuts, chocolate chips, and coconuts and stir until well combined.
5. Spoon about 2 T onto the baking sheet, with an inch or two between each cookie.
6. Bake for 20-30 minutes.

Review:
I didn't buy these as cookies. In fact, they were harder to eat if I thought of them as cookies. However, if you imagine them as muffins, they're a lot better. I would ease up on the cloves. Even a dash was a bit much.

So, bottom line... I'd make these again, but put them in a muffin pan with less cloves and maybe more cinnamon.
